Freezing and Storing Cake
A fully decorated cake can be frozen for up to 3 months when properly wrapped and stored.
Freezing
Remove any fresh flowers or inedible decorations from the cake.
Chill in the freezer for about 30 minutes to firm the frosting.
Wrap the cake snuggly in two layers of plastic wrap, followed by a layer of aluminum foil..
Label and date the wrapped cake, if desired.
Store the wrapped cake in the freezer for up to 3 months.
Thawing
Thaw in the refrigerator: The night before you plan to serve the cake, remove it from the freezer and place in the refrigerator. Refrigerate overnight, or for about 12 hours.
Remove wrapping: The next day, remove the cake from the refrigerator. Carefully remove aluminum foil and plastic wrap. Place cake on a plate and allow to sit at room temperature for at least 2 hours and up to 12 hours before serving. The larger the cake, the more time it may need to come to room temperature.
