Freezing and Storing Cake
A fully decorated cake can be frozen for up to 3 months when properly wrapped and stored.
Freezing
Chill the cake: Before freezing, allow the decorated cake to chill in the freezer for about 30 minutes to firm the frosting.
Wrap tightly: Wrap the cake in two layers of plastic wrap, followed by a layer of aluminum foil to prevent freezer burn.
Label and date: Write the type of cake and the date it was frozen on the packaging.
Freeze: Place the wrapped cake in the freezer for up to 3 months.
Thawing
Thaw in the refrigerator: The night before you plan to serve the cake, remove it from the freezer and place in the refrigerator. Refrigerate overnight, or for about 12 hours.
Remove wrapping: The next day, remove the cake from the refrigerator. Carefully remove aluminum foil and plastic wrap. Place cake on a plate and allow to sit at room temperature for at least 2 hours and up to 12 hours before serving. The larger the cake, the more time it may need to come to room temperature.
